Our dinner last night turned out to be delicious, and was easy and quick! I even took a picture because it looked so pretty, and it was HEALTHY!!
tip: I always keep frozen edamame(shelled soybeans) on hand. They are great for you, and have all 12 essential amino acids. The great thing is Alana thinks they are peas, so she eats them right up! You can find them in most grocer's frozen food sections.
Recipe for chicken stir-fry (you can even omit the chicken, since the edamame has all the protein you need in a meal.)
1-2 b/s chicken breasts: salt and pepper and drizzle with 1 TBSP apple cider vinegar after cutting, and let sit for 15 minutes.
1/4 c water
1/4 c soy sauce (I used low sodium and it was still great)
1/4 c honey
2 large garlic cloves
1/2 TBSP corn starch
Mix sauce and set aside.
1/4 onion (more or less depending on taste.)
1 c edamame
3-4 cups of your favorite veggies. (I used brocolli, carrots, zucchini, onion
cook chicken in a little olive or canola oil, take out of pan. Add edamame and carrots to hot pan. Stir fry 2 minutes. Add brocolli and onion. Stir fry 4 minutes. Add zucchini and stir fry 2 more minutes.
Add chicken back in, mix, then add sauce. Cook until sauce thickens, and voila! Done! Put stir fry on top of brown rice and enjoy with your favorite fruit salad!
